It all began in 2023 when Baxter, already scouting for land in Little River, stopped at the Hurunui Hotel on his way back. Over a conversation with the pub’s owner, Adam Martin, Baxter learned about the property for sale. The cave, partially transformed into a wine tasting room by the previous owner but never completed, immediately caught Baxter’s eye. ‘That cave is a gold mine,’ he thought, envisioning it as a unique venue for weddings and private events.
The handshake deal was sealed for NZ$690,000 ($584,000), and Baxter set to work. He finished the wine cave, added amenities for private functions, and turned the property into a turnkey operation. The two replica 1880 cottages, sold fully furnished down to the last detail, are ready for immediate use. But here’s the controversial part: Baxter, a self-proclaimed surfer with business interests in Australia, admits he’s not the one to ‘deal with bridezillas.’ Is this a missed opportunity, or a smart move to pass the torch to someone more passionate about marketing and event management?
Now, the property is back on the market, listed with Harcourts agent Michelle Singh. ‘It’s ready to go,’ she says, emphasizing its potential for expansion.
